ZUCCHINI TART AND GOAT CHEESE

A fresh and good looking tart for this February!
Full of veggies, a bit of mustard, sprinkles of fresh goat cheese on top of a crusty base and you get the perfect tart for an easy diner!

Ingredients:

(4 servings)

3 Zucchinis

1 Onion

1 Buchette Fleur (fresh goat cheese)

Mustard (optional)

Provencal herbs (optional)

Salt & Pepper


Preparation:

(20 minutes)

    1. Wash zucchinis.

    2. Thinly slice onions, heat up some olive oil in a pan and add the onions. Coot to transparent (do not caramelize).

    3. Line tin with pastry then poke with a fork. If you like, spread mustard on the bottom.

    4. Line the bottom with onions.

    5. Cut the zucchinis in thinly slices.

    6. From the outside working in a circular motion, over lap the zucchinis. Continue in a spiral motion until the entire base in covered.

    7. Salt and pepper. Shake some Provencal herbs on top to enhance the flavor, if you like it.

    8. Place in a preheat oven at 190°C for about 40mins until the zucchinis look cooked.

    9. Take the tart out of the oven and sprinkle the goat cheese on top.
