Roasted Kumara with Brie de Meaux

This is one of the easiest recipe. Serve this delicious dish with a fresh salad and Voila!

Ingredients:

(2 servings)

1 big Kumara

200g Brie de Meaux cheese

Hazelnuts

Olive oil

Salt, pepper


Preparation:

(10 minutes)

    1. Wash the kumara and place it on a sheet of baking paper. Brush with olive oil.

    2. Bake for 30 to 45 minutes at 200°C convection heat (you can check to see if kumara is cooked by pointing a knife through it, if still hard leave a bit longer).

    3. When cooked remove from oven and place hazelnut for 5 minutes to warm them up.

    4. Cut the kumara in two lengthwise, lay open skin side down. With a spoon remove soft insides (be careful not to ruin skin). Mix with olive oil, salt & pepper and place back inside kumara shell.

    5. Slide Brie inside mixed kumara and sprinkle with walnuts on-top.

    6. Wrap individually in aluminum foil and place in oven for around 5 minutes for cheese to melt.
